Fruit Filling
570g firm, ripe peaches (about 5), peeled, pitted, and cut into 1-inch wedges (you can substitute tinned peaches)
340g strawberries, hulled
⅓ cup sugar
1 tbsp cornstarch
Cobbler Topping
1 cup plain flour
½ tsp baking powder
Pinch of salt
230g unsalted butter (room temp)
1 cup sugar
2 large egg yolks
1 tsp grated lemon peel
1 tsp vanilla extract
To Serve
Vanulla ice cream
Preheat oven to 190°C. Butter a 20cm square baking dish.
Prepare fruit: In a bowl, mix peaches, strawberries, sugar, and cornstarch. Let sit 5 minutes, stirring occasionally. Transfer to baking dish.
Make topping:
Mix flour, baking powder, and salt in a small bowl.
In another bowl, beat butter and sugar until smooth.
Add yolks, lemon peel, and vanilla; mix well.
Stir in dry ingredients just until a moist dough forms.
Assemble & bake: Drop spoonfuls of dough evenly over fruit.
Bake for about 55 minutes, until juices are bubbling and topping is golden.
Cool slightly, then serve with a generous scoop of vanilla ice cream.
