Inspired by the legendary Huxtaburger—back when that name didn’t make people squirm—this cheeseburger recipe still delivers that same smash-hit flavour, minus the awkward associations. Juicy patties, melty cheese, and a swagger so strong it could strut off the plate.

Makes 4 burgers
500g minced beef
1 tsp sea salt
¼ tsp freshly ground black pepper
4 slices cheddar cheese
4 brioche burger buns, halved
1 brown onion, sliced
1 tsp brown sugar
Tomato ketchup (to taste)
Garlic aioli (to taste)
8 burger pickle slices
4 iceberg lettuce leaves, washed, dried, and torn
Prep the Patties
Season minced beef with salt and pepper.
Divide into four 120g portions and shape into 1cm-thick patties.
Place patties on baking paper and set aside.
Caramelise the Onion
Add sliced onion and brown sugar to a small saucepan.
Cook over low to medium heat, stirring occasionally, until soft and caramelised.
Grill the Patties
Heat a BBQ grill or non-stick frying pan over medium heat.
Cook patties for 4 minutes on one side.
Flip and cook for another 3 minutes.
Add a slice of cheddar on each patty and cook for 1 more minute, or until cheese is melted and patties are cooked through.
Toast the Buns
Lightly toast brioche buns cut-side down on the grill until golden.
Assemble the Burgers
Layer in the following order: Bottom bun → garlic aioli → cheese-topped patty → tomato ketchup → pickle slices → caramelised onion → torn lettuce → Top bun
