¾ cup whole almonds (for almond meal)
1 cup whole almonds (skin-on)
2 cups pitted dates, roughly chopped
1 tsp pure vanilla essence
Blitz ¾ cup almonds in a food processor until finely ground. Set aside.
Add the remaining almonds, dates, and vanilla to the processor. Blend until well combined and sticky.
Scoop heaped teaspoons of the mixture, roll in reserved almond meal, and shape into balls.
